A Veggie Meal Simple, But Filling And Nutritious!

Here’s an idea of what you could do for a simple, homemade veggie meal.
Use a variety of vegetables (5 to 6 types would be good). Add a dash of your favourite oil, and voila, you have a nutritious soup, which serves as a whole meal by itself. For bulk, you might want to add sweet potato.
Boil the carrot, leek and celery first. Add in the cauliflower/broccoli in between and the leafy greens last. I’ve got french beans in there too, but that’s only because I wanted to eat it up before it spoils! French beans do not belong in a soup…!
For the one week when I was ill recently, this is what I had for lunch after work. Just didn’t feel like going to the chap-fan stall to eat, so I would come home and make my own soup.
And this is what I discovered: It’s actually so filling, it lasted me until the night, and I could even go without dinner!
Go meatless once a week. There is horrendous suffering in the slaughterhouses.
