Easy-To-Prepare Vege Meals

Here’s sharing two of my own recipes – Tomato rice and Pumpkin porridge!
I recently acquired a Buffalo Smart Cooker, and cooking meals has been really, really fun and enjoyable. The smart cooker is so smart, so it is really good for cooking-dummies like me.
Saute garlic, ginger and onions (or shallots) with butter in the pot. Add cubed tomatoes and saute further. Then, add rice, water, salt, pepper and organic seasoning and cook it. For variation, add thinly sliced carrot with the tomatoes and you will get Tomato-Carrot rice! Serve with spring onions and slices of tomatoes. Additional dishes to go with it would be a huge salad and lightly boiled or steamed vegetables. And hard boiled organic kampung eggs.
Fed-up of the usual rice porridge? Try this: Brown rice-quinoa-millet porridge!
Wash brown rice and put into pot. Add millet and quinoa (rich in protein). Add organic pumpkin (with thick skin), carrot, cauliflower, pounded garlic and ginger. Add salt and organic seasoning. Put enough water (usually it’s 1 cup grains to 6 cups water) and cook the porridge. Serve with seaweed and parsley or Chinese celery. For more ingredients, you may add shiitake mushroom.
The Buffalo Smart Cooker is so smart that I can prepare all the ingredients, place them in the pot and preset the time for the cooking to be ready. So, I prepare all this in the morning and come home to a steaming hot meal! It doesn’t cook and keep warm until I get home. It cooks such that it’s only ready at the preset time. So, you get freshly cooked meals at that time.
Bon Appetit!
Eat food. Not too much. Mostly plants.
