PEOPLE COME AND GO IN OUR LIVES. SOME LEAVE A FOOTPRINT. WHILE FOR LISE, SHE LEFT US A YUMMY RECIPE FOR VEGAN BROWNIES!

Today, wed like to share a delicious vegan recipe contributed by our intern, Lise Coquilleau. Lise completed her internship in June. On her last day of work, she brought in a homemade vegan brownie for everyone at ACRES! And before she left, she pasted this recipe for us at the volunteer lounge best gift ever! Thank you, Lise!

VEGAN BEETROOT BROWNIE

Ingredients:

- 200g dark chocolate (bar or chips)

- 1 cooked beetroot

- 70g pecans (or another nut)

- 1tbsp vanilla extract

- 40g flour

- 1tsp baking soda

- 10cl soy or almond milk

- A dash of white wine vinegar

- Oil for the pan

- 30g brown sugar

Preheat the oven to 180C

Peel the cooked beetroot, cut it into large chunks. In a blender, puree it with the soy or almond milk then pour into a large bowl.

Melt the chocolate at low heat and add it to the beet puree. Add the flour, sugar and vanilla extract.

Crush and add the pecans.

Add the baking soda and vinegar and mix quickly.

Pour the batter into an oiled rectangular or square pan. Bake for 20 minutes.
