Dinner – Eat Like A Pauper?

It is said that one should “Eat breakfast like a king, lunch like a prince and dinner like a pauper” for optimum weight maintenance and good health”.
I feel like a connoisseur today, because I’ve been talking about food all day, but with good intentions – to share with you that it’s so possible to eat meat-free meals even if you lead a busy lifestyle, which I do.
My breakfast is always a millet drink with walnuts, sunflower and pumpkin seeds. Then, I’m good to go for four hours of mathematics until lunch which is usually chapfan at the food court where I pick the vegetable dishes.
Now, dinner for today is a simple home-cooked meal which can be done in about ten minutes.
Here’s how it’s prepared in ten minutes flat:
All ingredients are organic.
Cut up the bitter gourd and mushrooms. Marinate the bitter gourd with rock salt (that’s what I was told to do, I don’t know why, though, is it to reduce the bitter taste?).
Cut up the red capsicum and broccoli.

Cut up the carrot, with the skin on. It’s organic, so it’s okay.
The good thing when you cook veggie is that your cats won’t disturb you.
I always add leek for flavour and taste. It’s very aromatic.
If my son isn’t around, I add pumpkin (he doesn’t like pumpkin, somehow).
Fry all ingredients with oil.
Freshly boiled rice, left to cool.
Never ever use overnight rice. Never even eat overnight rice. There might be fungus on it already.
Turn OFF the flame, then mix in the rice (because the rice is still warm).
Add organic turmeric powder. Turmeric is an excellent spice, great for health.
Raw tomato and Japanese cucumber to top it up.
A dash of extra virgin olive oil.
Yawn….are you done already?!!!

I like fried rice, because it’s easy to make. After all, even if you have 3 dishes, finally, doesn’t it all end up all mixed up in the stomach? Ha ha…that’s a lazy person talking there…
I’m not getting any?
