Vegetarian Chow Mein.in 10 Minutes Flat!

Having two pilots in the family requires one to be innovative in preparing quick meals. You won’t know exactly what time the pilots will be back, so you have to be able to prepare quick yet nutritious meals.
Here’s what I prepared today, in 10 minutes flat, when my son got home from work today.
Method:
1. Boil the noodles in water while you chop up all the vegetables you want to add into the noodles.
I used: carrot, pumpkin, red capsicum, beetroot, leek, cauliflower and lettuce (‘coz that’s what I had in the fridge!). Five different types ought to do it and I had seven today.
2. Stir-fry the vegetables with garlic.
3. Pour away the hot water and soak the noodles in cool water.
4. Add the noodles to the vegetables.
That’s it. It’s done and that only took 10 minutes flat from start to finish.
